Abstract:Lipoxygenases, an important kind of enzyme in induced responses to stress in plants, are non-berne iron dioxygenases which catalyze the regio-and stereospecific hydroperoxidation of polyunsaturated fatty acids containing 1,4-Z, Z-pentadiene moiety, then the hydroperoxidative product is futher cleaved resulting in the formation of C3-, C6-, C9-, C12-aldehydes, alkones, alcohols, w-oxo acids and their esters etc. These volatile products, jasmonic acid and methyl jasmonate are consisted in the signal molecules of plant anti-stress system as well as induce the generation of resistant proteins and a series of against stress reaction. This review is focused on the research development of lipoxygenase, such as structure, characteristics,reaction mechanism, physiological function, determination methods of activity and artificial mimics.
